dalston emporium

the liquor bar's winterball has been successfully undertaken after plenty of thinking, planning, designing, devising, researching, meeting, talking, tweaking, changing, polishing and purchasing... complete with a glitterball and silver window shimming and a branding board, which doug made in his flat from cut outs of the logo and the theme and cardboard... as well as its own glamorous rollergirl in silver, black and white and a box wrapped around her neck, offering guests the crackers, with titilating liaison...on saturday 21 january 2012... chinese new year, year of the dragon, new moon, sun in aquarius, what a perfect timing and two birthdays to celebrate; first liquor bar of the year; we were busy!


and it was a fine blast! full of white tie, black tie, glitter, evening dress, suit, lace hankies, tie pins, hats, make up, wigs, moustaches and beards, heels and boots and patent, fabulous hairdos and masks, braces and belts and specs and sparking cupcakes and a lot of beverage; with alcohol and not, equally divine!


the winterball was inspired by the glamour of hollywood and the grace of the ballroom dancing, combining swing time and latino classics...


the drinks were inspired by the dances and hollywood divas...


the combination worked and made sense and it was beautiful, tasty and sexy!


i left the design after briefing and conversing to the magic of DHD design and went off to devise the menus, which, this time, included a respectable list of non alcoholic cocktails, as a. i knew a couple of folk were not drinking/ detoxing and b. it is important to consider the non drinkers and create something with imagination and healthy juice...


white and dark rum were the chachacha and rumba, the tequila was the paso doble, i'm in love with this dance; passionate and sexy and so rigorous, which i mixed with butterscotch schnapps, the bourbon became the bossa nova and the gin and vodka, jive and foxtrot!


fun... and it continues...


mary pickford, shirley temple, lucille ball and julie andrews graced the non alcoholic mixes with juices, ginger ale, grenadine, cherries, mint, elderflower and camomile tea and ginger rogers was my detox delight with ginger, beetroot and carrot... spicy and veggie virgin mary was chiling nicely in the jug...


a massive bowl of prohibition punch was scooped up quickly enough and the classics, always featured on my list, were not overlooked either: the chocolate manhattan with a dash of mozart chocolate liqueur was exquisite and the marmalade old fashioned still very popular among the bourbon lovers! there were classic ,martinis flying around too and andre could not help, but improvise with a good variation of a gin daiquiri!


the music was flowing and increasing in tempo, which totally facilitated the performance behind the deli counter cum bar, which was busy till its very end with a persistent massive queue!


i was totally proud of my team, beautiful, committed and professional young people, who seemed to be enjoying what they were doing, with loyalty and efficiency! learning from past mistakes is always good...


and of course the emporium was immensely helpful, from carrying stuff, to storing stuff and loving the whole affair! again, one has got to kiss plenty of frogs to find their prince, get it?


all good, onwards and upwards, i continue better and tighter each time...

a taster for the 21st... in the winterball

unruly media event

two very loyal friends who i met when i was managing a bar on broadway market, london, who became my regulars in my pop up bar, introduced me to their good friend, the ceo at unruly and the idea that i might be doing something in their offices as a gesture of good will and looking after their staff... of course, i said yes and time went by... till...


last thursday, i received an email from the ceo's colleague, introducing herself and inquiring whether i would be available to have my pop up bar in their offices on tuesday 10 january just gone!


of course, i said yes and i knew i had to act fast, which was a challenge to me!


we exchanged a few emails, whereas i needed to know certain pieces of information, so that i can get an idea with who i was dealing with, so that i can create the menu:


fast, quirky, fun, love to drink, more boys than girls, no theme, but a huge thank you to the investors and a list of preferred alcohol from mount gay rum to frangelico, was what i received...


so, i came up with drinks to satisfy all senses, using the spirits which they loved, fruity, nutty, bitter and exotic:


mango daiquiri with mount gay
gin daiquiri with bombay
sage martini with wyborowa
pineapple caipirihna with sagatiba silver
almonds and hazelnuts with amaretto and frangelico


and of course a non alcoholic concoction, as it is very important to consider the folk, who don't drink alcohol, for detox, health or religious purposes...
mango delight with grenadine and soda and a squeeze of lime...


needless to say, i had queues with curious and satisfied palettes by the counter of the open plan and spacious kitchen of their offices, to watch and to taste and i must admit here, they were seriously nice people, patient and understanding for good quality and quirky fun!
they drank the lot, half a bottle of gin and a drizzle of frangelico and a few cartons of juices... nice!


all happy and from the emails i received the next day, that was a very successful operation based on quick, imaginative and consistent response.


definitely something stav B's liquor bar would like to involved in...

zorokovich HQ

on friday 6 january, i was asked to come to the zorokovich HQ somewhere in homerton, london, to make a drink or two for a young journalist, who was invited to interview and know more about the brand...


i finished setting up the bar, which was simply and effectively a plank of wood clamped left and right on the kitchen surfaces... the joys of pop up never fail to amuse and amaze me...


and then i found out and again to my amusement, which is a good thing, that one journalist was actually another fifteen guests, including a good friend of daniel's, whose birthday it was and he was inviting a bunch of the guests for dinner at his house later!

i started them all with shots of vodka with a gherkin to warm them up...


i made them sage martinis, which is my latest signature drink, as i am really into  fresh herb cocktails at the moment and it went down a treat! so delicious and bitter and fresh!


french martinis and black russians and mules for something fresh and long and quick to make, added to the list and made everyone happy... i gave hilary a sage non alcoholic, because she is expecting and the little ones apple juice in a shot glass with an ice cube in it; kids love ice!


it was a fine affair, smooth and gentle with a superb drink experience for peeps  to leave with... the collaboration continues with an exquisite premium vodka with rich history...
